If I was to install my 2 year old dishwasher (still under warranty) into an IP, could I use the original cost base depreciated by 2 years life as the cost of the unit and depreciate it for the remaining life (6-8 years) or could I not use the item for depreciation purposes at all?

Yep, that would be fine. Just knock a bit off the original value. It's more than likely going to be less than $1,000, too, so if you are using the Low Value Pool you can bung it in there.
